The Nassau Grouper


The Nassau grouper is a medium to large fish, growing over a meter in length and up to 25 kilograms in weight. Its color varies depending on circumstances. In shallow water, it is basically tawny, but specimens from deeper water are pinkish or red, sometimes orange-red.
Superimposed on this base color are a number of lighter stripes, darker and forked stripe on the top of head. The Nassau Grouper lives near reefs; it is one of the largest fish to be found around coral reefs.

This species of Grouper is one of the most popular and regularly eaten Grouper in the Bahamas. It is a favorite among locals and visitors alike and is served from the menu of every restaurant in the Country.

In the Bahamas; the Nassau Grouper is still plentiful during the months of November through January. For this reason the Nassau Grouper is protected by “no catch’ zones enforced by the local government to preserve its longevity for future generations.

Favorite Grouper recipes amongst Bahamians include Boil Fish and Stew Fish. These are normally consumed for breakfast and are a staple every Saturday and Sunday morning. Other Grouper recipes include baked, boiled, fried and steamed.
